Beka's Chicken Enchiladas & A Winner

I thought it would be fun to spice things up a bit this Monday and share a favorite recipe with you! This one comes from my good friend, Beka. She made it for us at a MOPS (Mother's of Preschoolers) Steering Retreat five years ago and then put it in our MOPS Cookbook. It's super easy to make, it freezes well and it's crowd pleaser.

Beka's Chicken Enchiladas
2 c. cooked shredded or cut up chicken
1 (16 oz.) pkg. Sour Cream
2 (10 3/4 oz.) cans cream of chicken soup
1 can diced green chilies
2-4 c. shredded cheese (depending on your taste)
10 flour tortillas

Place frozen chicken in crock pot in the AM, or fresh chicken, cooked up any way. Crock pot chicken is the easiest to shred. Mix together cooked chicken, sour cream, cream of chicken soup and green chilies. Grease a 9x13 inch pan. Place about 1/3 cup of mixture in middle of tortilla and sprinkle a little cheese on top of this. Roll up tortilla and place in pan. When all the tortillas are made, spread the remaining chicken mixture on top and cover with left over cheese. Bake at 375 degrees, uncovered, for about 30 minutes or until cheese is browned.

This recipe also freezes well. Place pan from freezer into oven and bake for one hour, covered with foil. Remove foil and bake another 30 minutes.

  1. Oh - I LOVE green enchiladas! I prefer the traditional corn tortillas and I fry them a little first, but otherwise, this sounds a lot like my recipe. Yum, yum, yum! I think I'll make this for dinner this week.

  4. LOVE chicken enchiladas, but I make mine a bit different. I just put diced chicken and cheese into a tortilla and roll them up, place them into a baking dish, mix 1 can each of tomato sauce and enchilada sauce together, and pour over the top. Cover in cheese, bake until cheese is browned. (my chicken is aways fresh cooked and already hot...so they don't take long to bake) serve over white rice!

    My most recent "FUN" recipe has been pizza bites. You take refridgerated biscuits...you'll need a 4 pack....and flatten each out and put pizza toppings inside. I use small chunks of mozzerella cheese from a block of cheese, we used all sorts of ingredients and made all kinds of them. No sauce goes into the roll up, you use it later for dipping. After you put your ingredients into the flattend biscuit, you bring up all the edges and seal it by pinching. place them seam side down in a 9X13 greased baking dish. Brush the tops with beaten egg, then sprinkle garlic powder, parmesan cheese and italian seasoning over the tops. Bake at 425 for 20 minutes and enjoy~ My whole family devoured them! They were a HUGE hit! We might be having those again tonight.....(esp. since everyone is requesting them again already!!)

  5. That looks so good! I'm afraid all I can say is on my menu today is carrots...grapes...watermelon...and probably a thrown-together salad. Yes, my laziness is revealing itself... :)

    Heidi - I made these on Saturday, so I still need to think about supper tonight, as well! I'm thinking it's a good night for Swedish Meatballs and mashed potatoes! Mmmm...

    Wendy - the browned cheese on top is sooooo good. These make great leftovers, too.

    Jennifer - those pizza bites sound good, too! I'm sure my kiddos would love them. :)

    Melissa - I love this time of year for all the fresh produce. We had more fresh veggies and fruit yesterday in two meals than we probably have in a week of meals in the winter. Sounds yummy - and great food to help you fit into that new dress for ACFW!! :)

    Gabe, those enchiladas sound delish! It's almost lunchtime here and I'm hungry now. Too bad I'm just having a sandwich. Tonight it's grilled chicken over salad. Simple but fairly healthy!

    Tonight is fresh salmon filets, cooked in lemon butter and covered with capers, and a side of roasted asparagus.
